  • 1 large celery root (about 400g)
  • 1 medium onion (about 150g)
  • 3 cloves garlic
  • 4 cups low-sodium vegetable broth
  • 1 cup soy milk or heavy cream
  • 2 tablespoons spirulina powder
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Peel and chop the celery root into even chunks. Dice the onion and mince the garlic.
  2. In a large pot over medium heat, add olive oil. Cook diced onion and minced garlic until fragrant and translucent, about 5 minutes.
  3. Stir in chopped celery root and vegetable broth; bring to a gentle boil, then reduce to a simmer. Cook for 20-25 minutes until tender.
  4. Carefully transfer contents to a blender or use an immersion blender until smooth. Adjust consistency by adding more broth if desired.
  5. Return blended soup to pot over low heat, mix in spirulina powder and soy milk or cream, warming through for another 5 minutes.
  6. Ladle into bowls, garnishing with fresh herbs or a drizzle of olive oil before serving.
