  • 2 cups canned chickpeas (rinsed)
  • 1 cup roasted red peppers (jarred or homemade)
  • 1/4 cup tahini paste
  • 2 tablespoons lemon juice
  • 12 garlic cloves (to taste)
  • 2 tablespoons extra virgin olive oil
  • 1/2 teaspoon cumin powder
  • Salt and pepper (to taste)

Instructions

  1. Rinse canned chickpeas under cold water.
  2. If using fresh peppers, roast them at 400?F (200?C) for about 20-25 minutes until charred; let cool and peel.
  3. In a food processor, blend chickpeas, roasted red peppers, tahini, lemon juice, garlic, olive oil, cumin, salt, and pepper until smooth.
  4. If the mixture is too thick, add water one tablespoon at a time until the desired consistency is reached.
  5. Taste and adjust seasoning if necessary.
  6. Serve in a bowl with extra olive oil drizzled on top alongside pita chips or fresh vegetables.

Notes

For an extra kick, add chili flakes or cayenne pepper.

Store leftovers in an airtight container in the fridge for up to one week.
