Ingredients

  • 1 cup quinoa (white or red)
  • 1 cup chopped fresh vegetables (bell peppers, cucumbers, cherry tomatoes)
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 ripe avocado, sliced
  • 2 tablespoons freshly squeezed lemon juice
  • 2 tablespoons extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water. In a saucepan, combine quinoa with 2 cups of water. Bring to a boil, then reduce heat to low. Cover and simmer for 15 minutes until water is absorbed.
  2. While quinoa cooks, chop vegetables into bite-sized pieces.
  3. Once quinoa has cooled slightly, fluff it with a fork in a large bowl. Add chopped vegetables and drained chickpeas.
  4. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  5. Drizzle dressing over the assembled ingredients and top with sliced avocado before serving.

Notes
