  • 1 can (5 oz) chunk light tuna in water
  • 1 can (15 oz) garbanzo beans, rinsed and drained
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp extra virgin olive oil
  • 2 tbsp freshly squeezed lemon juice
  • Salt and pepper to taste

Instructions

  1. Drain the canned tuna and rinse the garbanzo beans under cold water.
  2. Dice the cherry tomatoes and cucumber; finely chop the red onion and parsley.
  3. In a large bowl, combine tuna, garbanzo beans, tomatoes, cucumber, red onion, and parsley. Toss gently to mix.
  4. Drizzle with olive oil and lemon juice; season with salt and pepper to taste.
