  • 1/4 cup panko breadcrumbs
  • 2 green onions, sliced
  • 1 tbsp fresh ginger, grated
  • 1/4 cup orange juice (freshly squeezed)
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp honey
  • 1 tsp cornstarch
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400?F (200?C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine ground chicken, panko breadcrumbs, sliced green onions, grated ginger, salt, and pepper. Mix well until combined.
  3. Form the mixture into small meatballs (about 1 inch in diameter) and place them on the prepared baking sheet.
  4. Bake for about 20 minutes or until golden brown and cooked through.
  5. While baking, whisk together the orange juice, soy sauce, honey, and cornstarch in a saucepan over medium heat until thickened.
  6. Toss the baked meatballs in the orange sauce until well coated before serving.
