  • 2 medium carrots, chopped (approximately 1 cup)
  • 2 medium parsnips, chopped (approximately 1 cup)
  • 2 medium Yukon Gold potatoes, quartered (approximately 1 cup)
  • 1 large sweet onion, diced
  • 3 cloves garlic, minced
  • 4 sprigs fresh thyme
  • 2 cups low-sodium chicken broth
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by washing and chopping all vegetables into bite-sized pieces.
  2. In a large pot or Dutch oven, heat olive oil over medium-high heat. Season the pheasant breasts with salt and pepper, then sear for about three minutes on each side until golden brown. Remove and set aside.
  3. In the same pot, saut? onions and garlic until fragrant. Add carrots, parsnips, and potatoes; cook for five minutes until slightly softened.
  4. Return the pheasant to the pot and add chicken broth along with thyme sprigs. Bring to a simmer and cover.
  5. Reduce heat to low and let cook for about 40 minutes or until pheasant reaches an internal temperature of at least 165?F.
  6. Serve warm with some of the broth drizzled over each plate.
