  • 1 cup wild rice
  • 2 cups vegetable broth
  • 1 medium onion, chopped
  • 2 celery stalks, chopped
  • 2 cups mixed mushrooms (cremini and shiitake), sliced
  • 1/2 cup dried cranberries
  • 1 tsp dried thyme
  • 1 tsp dried sage
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse the wild rice under cold water and cook it in vegetable broth according to package instructions.
  2. In a skillet, heat olive oil over medium heat. Add chopped onion and celery; saut? for about 5 minutes until softened.
  3. Add sliced mushrooms and cook until golden brown, about another 5 minutes.
  4. Stir in thyme, sage, dried cranberries, salt, and pepper; combine well.
  5. Once the wild rice is cooked, mix it into the skillet with the vegetable mixture.
  6. Preheat oven to 350?F (175?C). Transfer the mixture to a greased baking dish, cover with foil, and bake for 25 minutes.
