- 1 cup wild rice
- 2 cups vegetable broth
- 1 medium onion, chopped
- 2 celery stalks, chopped
- 2 cups mixed mushrooms (cremini and shiitake), sliced
- 1/2 cup dried cranberries
- 1 tsp dried thyme
- 1 tsp dried sage
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Rinse the wild rice under cold water and cook it in vegetable broth according to package instructions.
- In a skillet, heat olive oil over medium heat. Add chopped onion and celery; saut? for about 5 minutes until softened.
- Add sliced mushrooms and cook until golden brown, about another 5 minutes.
- Stir in thyme, sage, dried cranberries, salt, and pepper; combine well.
- Once the wild rice is cooked, mix it into the skillet with the vegetable mixture.
- Preheat oven to 350?F (175?C). Transfer the mixture to a greased baking dish, cover with foil, and bake for 25 minutes.
