- 1 lb boneless lamb or beef chunks
- 2 cups cauliflower florets
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 tsp ground cumin
- 2 tsp ground coriander
- 1 tsp ground cinnamon
- 2 cups low-sodium chicken broth
- 1 can (14 oz) fire-roasted tomatoes
- 1/2 cup dried apricots, chopped
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Prepare your ingredients by chopping the onion and garlic, and cutting the lamb or beef into bite-sized pieces.
- In a large pot, heat olive oil over medium heat. Add chopped onion and saut? until translucent (about 5 minutes). Add minced garlic and cook for another minute.
- Brown the meat in the pot for about 8 minutes, stirring occasionally.
- Add cumin, coriander, cinnamon, salt, and pepper. Pour in chicken broth and canned tomatoes. Stir well and add dried apricots.
- Bring to a gentle boil, then reduce heat to low. Cover and simmer for about 1 hour until meat is tender.
- Add cauliflower florets and simmer for an additional 20 minutes until tender yet crunchy.
