  • 1 lb boneless lamb or beef chunks
  • 2 cups cauliflower florets
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 1 tsp ground cinnamon
  • 2 cups low-sodium chicken broth
  • 1 can (14 oz) fire-roasted tomatoes
  • 1/2 cup dried apricots, chopped
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Prepare your ingredients by chopping the onion and garlic, and cutting the lamb or beef into bite-sized pieces.
  2. In a large pot, heat olive oil over medium heat. Add chopped onion and saut? until translucent (about 5 minutes). Add minced garlic and cook for another minute.
  3. Brown the meat in the pot for about 8 minutes, stirring occasionally.
  4. Add cumin, coriander, cinnamon, salt, and pepper. Pour in chicken broth and canned tomatoes. Stir well and add dried apricots.
  5. Bring to a gentle boil, then reduce heat to low. Cover and simmer for about 1 hour until meat is tender.
  6. Add cauliflower florets and simmer for an additional 20 minutes until tender yet crunchy.
