  • 2 medium zucchinis (spiralized)
  • 2 cloves garlic (minced)
  • 1/4 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 1 large egg
  • 1 tbsp extra virgin olive oil
  • 1 cup marinara sauce (for serving)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400?F (200?C) and line a baking sheet with parchment paper.
  2. Spiralize the zucchinis and set them aside in a strainer to drain excess moisture.
  3. In a large bowl, combine ground turkey, minced garlic, egg, grated Parmesan, Italian seasoning, salt, and pepper. Mix until just combined.
  4. Form the mixture into small meatballs (about 1 inch in diameter) and place them on the prepared baking sheet.
  5. Bake for about 20 minutes or until golden brown and cooked through.
  6. Meanwhile, heat olive oil in a skillet over medium heat. Add zucchini noodles and saut? for about 3 minutes until tender but still slightly crunchy.
  7. Serve the turkey meatballs atop the zucchini noodles and drizzle with marinara sauce.
