Ingredients
1 cup dried green or brown lentils
2 tablespoons olive oil
1 medium onion, chopped
2 medium carrots, diced
1 stalk celery, diced
3 cloves garlic, minced
2 tablespoons tomato paste
14 oz can crushed tomatoes
2 cups vegetable broth
1 teaspoon dried oregano
Salt and pepper to taste
Instructions
Heat olive oil in a skillet over medium heat. Saut? onions for about 5 minutes until translucent. Add carrots and celery; cook for another 5 minutes. Stir in garlic until fragrant.
Mix in tomato paste and let it simmer briefly.
Add lentils, crushed tomatoes, and vegetable broth. Bring to a boil, then reduce heat and cover; simmer for about 30 minutes until lentils are tender.
