Ingredients

Scale
  • 1 cup old-fashioned rolled oats
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 2 tbsp milk
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350?F (175?C) and line two baking sheets with parchment paper.
  2. In a large bowl, cream together softened butter and sugars until light and fluffy. Add the egg, milk, and vanilla; mix until combined.
  3. In another bowl, whisk together rolled oats, flour, baking powder, and salt. Gradually incorporate this dry mixture into the wet ingredients.
  4. Scoop tablespoon-sized portions of dough onto the prepared baking sheets about two inches apart.
  5. Bake for 12?15 minutes until lightly golden around the edges. Let cool on the sheets for a few minutes before transferring to a wire rack.
  6. Once cooled completely, mix powdered sugar with milk for icing consistency and drizzle over each cookie.

Notes

For added flavor in the icing, consider using almond or lemon extract.
