- 2 large whole-wheat or gluten-free tortillas
- 1 ripe avocado
- 2 tbsp freshly squeezed lime juice
- 1 red bell pepper, diced

- 2 tbsp natural peanut butter
- 1 tbsp low-sodium soy sauce
- 1 tsp maple syrup
Instructions
- Rinse chickpeas and chop bell pepper and cilantro.
- In a small bowl, whisk together peanut butter, soy sauce, and maple syrup until smooth. Add water if needed to reach desired consistency.
- In another bowl, mash the avocado with lime juice, then mix in half of the chickpeas for texture.
- Lay out the tortilla on a clean surface. Spread the avocado mixture in the center; layer with remaining chickpeas, bell peppers, and cilantro.
- Drizzle generously with peanut sauce.
- Roll up tightly from one end to another and slice in half to showcase layers. Enjoy immediately or wrap for later.
