Description

These wraps combine spiced chickpeas, fresh vegetables, and a creamy peanut sauce wrapped in a soft tortilla.   • 1 cup canned chickpeas, rinsed and drained
  • 2 large whole-wheat or gluten-free tortillas
  • 1 ripe avocado
  • 2 tbsp freshly squeezed lime juice
  • 1 red bell pepper, diced
  • ? cup fresh cilantro, chopped
  • 2 tbsp natural peanut butter
  • 1 tbsp low-sodium soy sauce
  • 1 tsp maple syrup

Instructions

  1. Rinse chickpeas and chop bell pepper and cilantro.
  2. In a small bowl, whisk together peanut butter, soy sauce, and maple syrup until smooth. Add water if needed to reach desired consistency.
  3. In another bowl, mash the avocado with lime juice, then mix in half of the chickpeas for texture.
  4. Lay out the tortilla on a clean surface. Spread the avocado mixture in the center; layer with remaining chickpeas, bell peppers, and cilantro.
  5. Drizzle generously with peanut sauce.
  6. Roll up tightly from one end to another and slice in half to showcase layers. Enjoy immediately or wrap for later.
