Ingredients

  • 4 medium fresh carrots, peeled and chopped
  • 1 (2-inch) piece of fresh ginger, grated
  • 2 tbsp extra virgin olive oil
  • 12 oz cod fillets (two 6 oz fillets)
  • Salt and pepper to taste

Instructions

  1. Peel and chop the carrots into small pieces.
  2. In a medium saucepan, cover the carrots with water and bring to a boil. Simmer for 15-20 minutes until soft.
  3. Add grated ginger to the pan and simmer for an additional 5 minutes.
  4. Drain excess water (reserve some), then blend carrots and ginger until smooth, adding reserved water for desired consistency.
  5. In a skillet, heat olive oil over medium-high heat. Season cod fillets with salt and pepper and pan-fry for 3-4 minutes per side until golden brown.
  6. Serve cod alongside the vibrant carrot and ginger pur?e.
