  • 6 large collard green leaves
  • 1 cup cooked quinoa
  • 1 cup chopped mixed vegetables (bell peppers, carrots, zucchini)
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 cup salsa or tomato sauce

Instructions

  1. Blanch collard greens in boiling water for 2 minutes until tender. Drain and cool.
  2. In a bowl, mix cooked quinoa with chopped vegetables and spices.
  3. Place each collard leaf flat and spoon 2 tablespoons of filling at the base; roll tightly like a burrito.
  4. Arrange rolls seam-side down in a greased baking dish and top with salsa.
  5. Bake at 375?F (190?C) covered with foil for 25 minutes.
  6. Let cool slightly before serving; drizzle with extra salsa if desired.
