  • 1/2 medium head green or Savoy cabbage, chopped
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 can (13.5 oz) full-fat coconut milk
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, minced
  • 2 tbsp curry powder
  • 2 cups low-sodium vegetable broth
  • Juice of 1 lime

Instructions

  1. In a large pot over medium heat, drizzle olive oil and saut? the chopped onion until translucent (about 5 minutes). Add minced garlic and ginger; cook for another minute until fragrant.
  2. Sprinkle in curry powder and stir well to coat the onions; let bloom for about 2 minutes.
  3. Add chopped cabbage and cook until slightly wilted; mix in drained chickpeas and cook for another 5 minutes.
  4. Pour in coconut milk and vegetable broth; bring to a simmer and let bubble for about 10 minutes.
  5. Squeeze in fresh lime juice before serving; taste and adjust seasoning if necessary.
  6. Serve hot with rice or naan, garnished with fresh herbs if desired.
