  • 1/2 cup red onion, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1 cup corn (fresh or frozen)
  • 1/2 cup Greek yogurt
  • 2 tbsp lemon juice

Instructions

  1. 1. Cook the chicken: Preheat grill or oven to medium-high heat. Season chicken with salt and pepper. Grill or bake for about 6-7 minutes per side until fully cooked (165?F). Let cool before dicing.
