Ingredients

  • 1 block (14 oz) firm tofu
  • 2 cups fresh spinach
  • 1 cup cherry tomatoes, halved
  • 2 cloves garlic, minced
  • 2 tsp olive oil
  • 1 tsp turmeric powder
  • Salt and pepper to taste

Instructions

  1. Press the tofu between two plates for about 15 minutes to remove excess moisture. While pressing, mince the garlic.
  2. Crumble the pressed tofu into bite-sized pieces.
  3. Heat olive oil in a nonstick skillet over medium heat. Add minced garlic and saut? until fragrant (about 1 minute).
  4. Stir in crumbled tofu, turmeric powder, salt, and pepper. Cook for 5 minutes until slightly golden.
  5. Add spinach and cherry tomatoes to the skillet. Cook for another 2 minutes until spinach wilts and tomatoes soften.
  6. Serve warm on plates; enjoy as is or with whole-grain toast.
