- 1 cup quinoa
- 2 tablespoons olive oil
- 1/4 cup fresh coriander, chopped
- Juice of 1 lemon
- 3 cups low-sodium vegetable broth

Instructions
- Rinse the lentils and quinoa under cold water.
- In a saucepan, cook lentils in 3 cups of vegetable broth over medium heat for 20-25 minutes until tender.
- In another pot, cook quinoa in 2 cups of vegetable broth over medium heat for about 15 minutes until fluffy.
- Combine cooked lentils and quinoa in a large bowl. Add olive oil, lemon juice, fresh coriander, salt, and pepper; mix gently.
