  • 1 cup green lentils
  • 1 cup quinoa
  • 2 tablespoons olive oil
  • 1/4 cup fresh coriander, chopped
  • Juice of 1 lemon
  • 3 cups low-sodium vegetable broth
  • Salt and pepper to taste

Instructions

  1. Rinse the lentils and quinoa under cold water.
  2. In a saucepan, cook lentils in 3 cups of vegetable broth over medium heat for 20-25 minutes until tender.
  3. In another pot, cook quinoa in 2 cups of vegetable broth over medium heat for about 15 minutes until fluffy.
  4. Combine cooked lentils and quinoa in a large bowl. Add olive oil, lemon juice, fresh coriander, salt, and pepper; mix gently.
  5. Serve warm or chilled, garnished with extra coriander or lemon zest if desired.
