Ingredients

  • 1 cup powdered sugar (120g)
  • 1/2 cup almond flour (50g)
  • 3 large egg whites (100g), room temperature
  • 1/4 cup granulated sugar (50g)
  • 1/4 cup unsweetened cocoa powder (25g)
  • 1/4 cup unsalted butter (57g), room temperature
  • 1/4 cup heavy cream (60ml)

Instructions

  1. Preheat oven to 300?F (150?C) and line baking sheets with parchment paper.
  2. Pulse together powdered sugar, almond flour, and cocoa powder in a food processor until fine, then sift into a bowl.
  3. Whip egg whites in a clean bowl until foamy. Gradually add granulated sugar and whip until stiff peaks form.
  4. Gently fold dry ingredients into whipped egg whites until well combined; aim for lava-like consistency.
  5. Pipe small circles onto prepared baking sheets and let rest for 30 minutes to form a skin.
  6. Bake for 15-18 minutes, then cool completely before filling with ganache or buttercream.
