  • 2 medium fresh beets (about 250g)
  • 1 large crisp apple (e.g., Granny Smith or Fuji), cored and sliced
  • 1 cup shredded red cabbage (about 100g)
  • 1/2 cup raw pecans (about 60g)
  • 2 tbsp honey
  • 2 tbsp freshly squeezed lemon juice
  • 3 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400?F (200?C). Wrap each beet in aluminum foil and roast on a baking sheet for 45-60 minutes until tender. Allow to cool, then peel and cut into matchsticks.
  2. While the beets are roasting, thinly slice the red cabbage and toss it in a large bowl.
  3. Core and thinly slice the apple, tossing it with lemon juice to prevent browning.
  4. In a dry skillet over medium heat, toast the pecans for about five minutes until fragrant.
  5. In a small bowl, whisk together olive oil, honey, salt, and pepper for the dressing.
  6. Combine roasted beets, cabbage, apples, and pecans in the large bowl with dressing. Toss well to coat evenly.
