- 1 large crisp apple (e.g., Granny Smith or Fuji), cored and sliced
- 1 cup shredded red cabbage (about 100g)
- 1/2 cup raw pecans (about 60g)
- 2 tbsp honey
- 2 tbsp freshly squeezed lemon juice
- 3 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 400?F (200?C). Wrap each beet in aluminum foil and roast on a baking sheet for 45-60 minutes until tender. Allow to cool, then peel and cut into matchsticks.
- While the beets are roasting, thinly slice the red cabbage and toss it in a large bowl.
- Core and thinly slice the apple, tossing it with lemon juice to prevent browning.
- In a dry skillet over medium heat, toast the pecans for about five minutes until fragrant.
- In a small bowl, whisk together olive oil, honey, salt, and pepper for the dressing.
- Combine roasted beets, cabbage, apples, and pecans in the large bowl with dressing. Toss well to coat evenly.
