  • 1 cup dried chickpeas (soaked overnight)
  • 1 cup fresh parsley (packed)
  • 1 medium onion (chopped)
  • 3 garlic cloves (minced)
  • 2 tsp ground cumin
  • 1 tsp ground coriander
  • 1/4 cup tahini paste
  • 2 tbsp lemon juice
  • Water (as needed for sauce consistency)
  • Salt (to taste)

Instructions

  1. Soak the dried chickpeas overnight in water.
  2. In a food processor, blend soaked chickpeas, parsley, onion, garlic, cumin, and coriander until finely chopped but not pureed.
  3. Shape the mixture into tablespoon-sized balls and place them on a parchment-lined baking sheet.
  4. Bake at 375?F for 25-30 minutes or fry in oil until crispy.
  5. For the tahini sauce, whisk together tahini paste, lemon juice, and enough water for desired consistency. Season with salt.
  6. Serve falafel balls warm or cold with tahini sauce.
