Ingredients
1 lb lean ground beef
2 cups shredded cheese (cheddar or Monterey Jack)
8 large flour tortillas
Spices: cumin, chili powder, garlic powder, onion powder
Vegetable oil for frying
Instructions
In a skillet over medium heat, cook the ground beef until browned. Drain excess grease and mix in spices.
Warm tortillas slightly until pliable. Place about 1/4 cup of the beef mixture and 2 tablespoons of cheese on each tortilla. Fold and roll tightly.
Heat vegetable oil in a heavy pot over medium-high heat. Fry chimichangas seam-side down for about 3-5 minutes per side until golden brown.
Drain on paper towels before serving.
