  • 1 lb fresh carrots (about 68 medium)
  • 1/2 cup slivered almonds
  • 2 tbsp extra virgin olive oil
  • 1/4 tsp sea salt
  • 1 cup hummus or ranch dressing (optional)

Instructions

  1. Preheat your oven to 400?F (200?C). Wash and peel the carrots if desired.
  2. Cut each carrot into finger-sized pieces, about four inches long, tapering one end to resemble a fingertip.
  3. Press an almond firmly into the tip of each carrot piece to create fingernails.
  4. Arrange the carrot fingers on a baking sheet lined with parchment paper. Drizzle with olive oil and sprinkle lightly with salt; toss gently to coat.
  5. Roast in the oven for 20-25 minutes until tender yet crisp.
  6. Cool slightly and serve on a platter with dips alongside.
