Instructions
- Preheat your oven to 400?F (200?C). Wash and peel the carrots if desired.
- Cut each carrot into finger-sized pieces, about four inches long, tapering one end to resemble a fingertip.
- Press an almond firmly into the tip of each carrot piece to create fingernails.
- Arrange the carrot fingers on a baking sheet lined with parchment paper. Drizzle with olive oil and sprinkle lightly with salt; toss gently to coat.
- Roast in the oven for 20-25 minutes until tender yet crisp.
