- 2 lbs peeled Russet potatoes
- 1 medium onion, finely chopped
- 4 cloves garlic, minced
- 6 cups low-sodium vegetable broth
- 4 slices bacon, cooked and crumbled (or turkey bacon)
- 1 cup heavy cream
- 2 tbsp fresh chives, chopped
Instructions
- Peel and dice the potatoes into bite-sized cubes. Finely chop the onion and mince the garlic.
- In a large pot over medium heat, cook the bacon until crispy. Remove and set aside, leaving the drippings in the pot.
- Saut? the onion in bacon drippings until translucent (about 5 minutes), then add garlic and cook for another minute.
- Add diced potatoes and vegetable broth; bring to a boil. Reduce heat and simmer until potatoes are tender (about 20 minutes).
- Use an immersion blender to puree until smooth (or blend in batches). Stir in heavy cream and season with salt and pepper.
- Serve hot, garnished with crumbled bacon and chopped chives.
