Description

Ingredients

  • 2 lbs peeled Russet potatoes
  • 1 medium onion, finely chopped
  • 4 cloves garlic, minced
  • 6 cups low-sodium vegetable broth
  • 4 slices bacon, cooked and crumbled (or turkey bacon)
  • 1 cup heavy cream
  • 2 tbsp fresh chives, chopped

Instructions

  1. Peel and dice the potatoes into bite-sized cubes. Finely chop the onion and mince the garlic.
  2. In a large pot over medium heat, cook the bacon until crispy. Remove and set aside, leaving the drippings in the pot.
  3. Saut? the onion in bacon drippings until translucent (about 5 minutes), then add garlic and cook for another minute.
  4. Add diced potatoes and vegetable broth; bring to a boil. Reduce heat and simmer until potatoes are tender (about 20 minutes).
  5. Use an immersion blender to puree until smooth (or blend in batches). Stir in heavy cream and season with salt and pepper.
  6. Serve hot, garnished with crumbled bacon and chopped chives.
