- 1 cup steamed cauliflower florets
- 1/2 cup plain whole-milk Greek yogurt

Instructions
- Preheat oven to 400?F (200?C). Wrap whole beets in aluminum foil and roast on a baking sheet for about 1 hour until tender. Let cool before peeling.
- Steam cauliflower florets until fork-tender, about 10 minutes.
- In a food processor, combine roasted beets, steamed cauliflower, Greek yogurt, lemon juice, garlic cloves, and olive oil. Blend until smooth.
- Season with salt and pepper to taste; blend briefly to mix.
- Chill in the refrigerator for at least 30 minutes before serving with vegetable sticks or pita chips.
