Description

Winter Rutabaga and Ginger Puree is a heartwarming dish that perfectly captures the essence of cozy winter nights. This creamy, vibrant puree combines the earthy sweetness of rutabaga with the spicy kick of fresh ginger, creating a delightful flavor experience. Quick to prepare and versatile enough to serve as a stand-alone dish or an enticing side, it offers both comfort and nutrition during the chilly months.

Ingredients

Scale
  • 1 large rutabaga (about 1 pound), peeled and cubed
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons unsalted butter (or olive oil for a vegan option)
  • 1 cup low-sodium vegetable broth
  • Salt and pepper to taste

Instructions

  1. Peel and cube the rutabaga into one-inch chunks.
  2. In a large pot, bring salted water to a boil. Add the rutabaga cubes and cook until fork-tender, about 15-20 minutes.
  3. Drain the rutabaga and return it to the pot. Stir in grated ginger while still warm.
  4. Add butter (or olive oil) and vegetable broth. Blend using an immersion blender until smooth and creamy.
  5. Season with salt and pepper to taste.
  6. Serve hot, garnishing with fresh herbs or crispy shallots if desired.
