- 2 lbs boneless, skinless chicken thighs
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 large carrots, sliced
- 1 cup dried apricots, halved
- 1 cinnamon stick
- 1 tsp cumin powder
- 1 tsp coriander powder
- Salt and pepper to taste
- 2 cups chicken broth
- ? cup sliced almonds (for topping)
Instructions
- Chop the onion and garlic; slice the carrots.
- Layer the chicken thighs at the bottom of the Crockpot. Top with onions, garlic, carrots, and apricots.
- Sprinkle cumin and coriander over the ingredients. Season with salt and pepper.
- Pour chicken broth over everything until nearly submerged. Add the cinnamon stick on top.
- Cover and cook on low for 6-8 hours or high for 3-4 hours until chicken is tender.
- Remove the cinnamon stick before serving hot over couscous or rice, garnished with toasted almonds.
