- 2 lbs beef chuck roast
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 medium yellow onion, chopped
- 2 bell peppers (any color), chopped
- 4 cloves garlic, minced
- 2 cups beef broth
- 2 tbsp chili powder
- 1 tsp ground cumin
Instructions
- Chop onions and bell peppers; mince garlic.
- In a skillet over medium heat, sear beef chuck roast on all sides until browned (about five minutes per side).
- Layer seared beef in the bottom of the Crockpot. Add onions, bell peppers, garlic, canned beans, chili powder, cumin, and enough beef broth to cover.
- Set Crockpot on low heat for 6 to 8 hours or high heat for 3 to 4 hours.
- Once cooked through, remove beef and shred it using two forks before returning it to the pot. Stir well and serve hot.
