Ingredients

  • 2 lbs beef chuck roast
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 medium yellow onion, chopped
  • 2 bell peppers (any color), chopped
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 2 tbsp chili powder
  • 1 tsp ground cumin

Instructions

  1. Chop onions and bell peppers; mince garlic.
  2. In a skillet over medium heat, sear beef chuck roast on all sides until browned (about five minutes per side).
  3. Layer seared beef in the bottom of the Crockpot. Add onions, bell peppers, garlic, canned beans, chili powder, cumin, and enough beef broth to cover.
  4. Set Crockpot on low heat for 6 to 8 hours or high heat for 3 to 4 hours.
  5. Once cooked through, remove beef and shred it using two forks before returning it to the pot. Stir well and serve hot.
