- 1 can (14 oz) coconut milk
- 2 tbsp olive oil
Instructions
- Wash collard greens thoroughly, remove tough stems, and chop into bite-sized pieces. Dice onion and mince garlic.
- Heat olive oil in a large pot over medium heat. Saut? onion until translucent (about 5 minutes), then add garlic for another minute.
- Stir in chopped collard greens and cook until wilted (approximately 5 minutes).
- Add chickpeas and vegetable broth; bring to a simmer. Mix in harissa paste according to your spice preference.
- Pour in coconut milk after simmering for 10 minutes, stirring well.
- Simmer for an additional 10 minutes before serving. Taste-test and adjust seasoning if needed.
