  • 2 medium sweet potatoes (about 500g), peeled and chopped
  • 2 stalks fresh celery, finely chopped
  • 3 tbsp unsalted butter
  • 1/4 cup heavy cream (or milk)
  • Salt and pepper to taste

Instructions

  1. Peel and chop sweet potatoes into uniform chunks. Rinse and finely chop celery.
  2. Boil salted water in a large pot; add sweet potato chunks and cook for 15-20 minutes until fork-tender.
  3. Meanwhile, heat butter in a skillet over medium heat; saut? celery for about 5 minutes until tender yet crunchy.
  4. Drain sweet potatoes, return them to the pot, add saut?ed celery, heavy cream, and remaining butter. Mash until smooth.
  5. Season with salt and pepper as desired. Serve warm.
