Ingredients
- 1 cup quinoa, rinsed
- 1 cup fresh celery, chopped
- 1 cup cherry tomatoes, halved

- 2 tbsp lemon juice (freshly squeezed)
- 1 tbsp honey
Instructions
- Cook quinoa by combining with two cups of water in a pot. Bring to a boil, then reduce heat to low and simmer for 15 minutes until liquid is absorbed. Fluff with a fork.
- While quinoa cooks, chop celery, halve cherry tomatoes, dice cucumber, and slice red onion.
