- 1 cup chopped celery stalks
- 1/2 cup freshly grated Parmesan cheese
- 1/4 cup lightly toasted pine nuts
- 3 garlic cloves
- 1/2 cup extra virgin olive oil
- 8 oz pasta (spaghetti or penne)
- Salt and pepper to taste
Instructions
- Rinse the basil and celery, then pat them dry.
- Toast the pine nuts in a skillet over medium heat for about 4-5 minutes until golden brown.
- In a food processor, combine basil, toasted pine nuts, garlic, and Parmesan cheese; pulse until finely chopped.
- With the processor running, gradually add olive oil until smooth. Scrape down the sides as needed.
- Bring salted water to boil in a pot. Cook pasta according to package instructions until al dente; drain, reserving some pasta water.
- Toss hot pasta with the pesto in a large bowl. If too thick, add reserved pasta water one tablespoon at a time until desired creaminess is achieved.
