- 2 medium beets (about 1 lb), roasted
- 1 cup green or brown lentils, rinsed
- 1 cup sharp cheddar cheese, shredded
- 3 tablespoons extra virgin olive oil
- 2 tablespoons red wine vinegar
- 1 clove garlic, minced
- Salt & pepper to taste
Instructions
- Preheat your oven to 400?F (200?C). Wash and wrap the beets in foil; roast for 45-60 minutes until tender.
- While the beets roast, combine rinsed lentils with 3 cups of water in a saucepan. Bring to a boil, then reduce heat and simmer for 20-25 minutes until tender. Drain any excess water.
- In a small bowl, whisk together olive oil, red wine vinegar, minced garlic, salt, and pepper to make the dressing.
- Once the beets are cool enough to handle, peel and chop them into bite-sized pieces. In a large bowl, mix the cooked lentils with chopped beets.
- Stir in shredded cheddar cheese until well combined.
- Drizzle the dressing over the salad and toss gently before serving.
