Ingredients

  • 3 medium sweet potatoes, peeled and cubed (about 600g)
  • 2 medium beets, peeled and cubed (about 300g)
  • 2 tbsp unsalted butter (28g)
  • 1/2 cup sour cream (120ml)
  • Salt and pepper to taste

Instructions

  1. Boil sweet potatoes in salted water for about 15-20 minutes until tender. In a separate pot, boil beets for about 30-40 minutes until fork-tender.
  2. Drain both vegetables and allow to dry slightly.
  3. In a large bowl, combine sweet potatoes and beets. Add butter and sour cream, then mash until desired consistency is reached.
  4. Season with salt and pepper to taste. For extra flavor, add garlic powder or fresh herbs if desired.
  5. Serve warm in an elegant bowl, optionally garnished with additional sour cream or herbs.
