  • 2 tbsp extra virgin olive oil
  • 1 medium onion, diced
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 4 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 1 tsp dried thyme
  • 1 bay leaf
  • 2 cups fresh spinach or kale

Instructions

  1. Heat olive oil in a large pot over medium heat. Saut? onions, carrots, and celery for about 5 minutes until softened.
  2. Add minced garlic; saut? for another minute until fragrant.
  3. Stir in white beans and vegetable broth; bring to a gentle simmer.
  4. Season with dried thyme and bay leaf; let simmer for 20 minutes.
  5. Add spinach or kale and stir until wilted (about 2 minutes).
