  • 3 large carrots, peeled and chopped
  • 2 large parsnips, peeled and chopped
  • 3 medium Yukon Gold potatoes, diced

Instructions

  5. Transfer roasted vegetables to a pot; add vegetable broth and simmer on medium heat for about 10 minutes.
