  • 1 cup rolled oats
  • 1 medium beet (about 6 oz), peeled and diced
  • 1 medium apple (about 6 oz), cored and diced
  • 1 tsp ground cinnamon
  • 2 cups milk or milk alternative
  • 2 tbsp maple syrup
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400?F (200?C) and line a baking sheet with parchment paper.
  2. Toss the diced beets with olive oil, salt, and pepper. Spread them on the baking sheet and roast for 25-30 minutes until tender.
  3. In a saucepan over medium heat, combine rolled oats and milk; cook for 5-7 minutes until creamy.
  4. Stir in diced apples, cinnamon, and maple syrup into the cooked oats; cook for an additional few minutes until apples soften.
  5. Once beets are done roasting, fold them into the oat mixture.
  6. Serve warm in bowls topped with extra apple slices or a drizzle of maple syrup.
