  • 1.5 lbs boneless, skinless chicken thighs
  • 2 medium carrots, chopped
  • 1 lb Yukon Gold potatoes, diced
  • 2 stalks celery, chopped
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Set the Instant Pot to saut? mode. Add a splash of olive oil and saut? the onions and garlic until fragrant (about 3 minutes).
  2. Add the chicken thighs and season with salt and pepper. Brown on both sides for about 5 minutes.
  3. Stir in the carrots, potatoes, celery, and thyme; mix well.
  4. Pour in the chicken broth while scraping any bits from the pot.
  5. Seal the lid and cook on high pressure for 10 minutes; allow a natural release for 5 minutes before quick releasing remaining pressure.
  6. Stir the stew before serving hot in bowls.
