  • 1 cup green or brown lentils
  • 1 can (15 oz) low-sodium chickpeas, drained and rinsed
  • 6 cloves fresh garlic, minced
  • 1 medium onion, diced
  • 2 medium carrots, chopped
  • 2 stalks celery, diced
  • 4 cups vegetable broth
  • 1 tsp ground cumin
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Saut? onions, carrots, and celery for about five minutes until softened. Add garlic and saut? for an additional minute.
  2. Stir in lentils until coated with the oil and aromatics.
  3. Pour in vegetable broth along with cumin, salt, and pepper. Bring to a gentle boil, then reduce heat to low and cover. Simmer for about 30 minutes until lentils are tender.
  4. Add chickpeas during the last ten minutes of cooking to warm through.
  5. Taste and adjust seasonings if necessary before serving.
