  • 2 medium carrots, diced
  • 4 cloves garlic, minced
  • 1 medium onion, chopped
  • 1 can (14 oz) coconut milk
  • 3 cups vegetable broth
  • 1 tsp ground cumin
  • 1 tsp ground turmeric
  • 1 tsp ground coriander
  • Juice of 1 lime

Instructions

  1. In a large pot over medium heat, add a splash of oil and saut? chopped onions and minced garlic until soft and fragrant (about 5 minutes).
  2. Stir in diced carrots and spices (cumin, coriander, turmeric); cook for an additional 2 minutes.
  3. Add red lentils and vegetable broth; stir well and bring to a gentle boil.
  4. Reduce heat to low, cover, and simmer for about 20 minutes or until lentils are tender, stirring occasionally.
  5. Once cooked, mix in coconut milk and simmer uncovered for another 5 minutes to thicken.
  6. Remove from heat and squeeze fresh lime juice over the dahl before serving.
