  • 3 medium carrots, sliced
  • 2 celery stalks, chopped
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 6 cups low-sodium chicken broth
  • 1 tsp dried thyme
  • 2 cups egg noodles
  • Salt and pepper to taste

Instructions

  1. Prepare by chopping the carrots, celery, onion, and garlic.
  2. Place the chicken breasts at the bottom of the crockpot. Layer with chopped veggies and minced garlic.
  3. Pour in the chicken broth until all ingredients are submerged, then season with thyme, salt, and pepper.
  4. Cover and cook on low for 6 hours or high for 4 hours.
  5. Once cooked, shred the chicken and return it to the pot along with uncooked egg noodles.
