  • 4 cups chopped green cabbage
  • 2 cups chopped winter greens (such as kale or Swiss chard)
  • 1 can (13.5 oz) unsweetened coconut milk
  • 4 cups low-sodium vegetable broth
  • 3 cloves garlic, minced
  • 1 medium onion, finely chopped
  • 1-inch piece fresh ginger, grated
  • 2 tbsp lemon juice
  • Salt and pepper to taste
  • Optional: chili flakes for heat

Instructions

  1. Chop all vegetables: slice the cabbage, tear the greens, mince the garlic, chop the onion, and grate the ginger.
  2. In a large pot over medium heat, add oil and saut? the chopped onion until translucent. Add minced garlic and grated ginger; cook until fragrant.
  3. Stir in chopped cabbage and cook for about five minutes until wilted. Add winter greens and cook for another minute.
  4. Pour in vegetable broth and coconut milk; bring to a gentle boil then reduce heat to simmer for about ten minutes.
  5. Season with salt, pepper, lemon juice, and optional chili flakes before serving hot.
