  • 1 medium head cauliflower (about 600g), cut into florets
  • 1 medium onion (about 150g), chopped
  • 3 garlic cloves, minced
  • 4 cups (960ml) low-sodium vegetable broth
  • ? cup (120ml) heavy cream or coconut milk
  • 2 tbsp (30ml) olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare the vegetables: Wash and chop the potatoes into small cubes, slice the cabbage into thin strips, and break cauliflower into florets.
  2. Saut? aromatics: In a large pot over medium heat, heat olive oil and saut? onion until translucent (about 5 minutes). Add minced garlic and cook until fragrant.
  3. Cook vegetables: Stir in diced potatoes, chopped cabbage, and cauliflower florets. Pour in vegetable broth and bring to a gentle boil.
