- 1 medium butternut squash (peeled and cubed)
- 4 cups mixed greens (arugula or spinach)

- ? cup dried cranberries
- ? cup crumbled feta cheese
- 2 tbsp extra virgin olive oil
- 2 tbsp balsamic vinegar
- Salt and pepper to taste
Instructions
- Preheat the oven to 400?F (200?C). Toss butternut squash cubes with olive oil, salt, and pepper on a baking sheet. Roast for 25-30 minutes until tender.
- While the squash roasts, wash and dry the mixed greens thoroughly.
- Thinly slice the red onion.
- Once the squash has cooled slightly, mix it with the greens, red onion, and dried cranberries in a large bowl.
- Crumble feta over the top and drizzle with balsamic vinegar just before serving. Toss gently to combine.
