Description

Butternut Squash Gnocchi With Sage Brown Butter is a comforting and delightful dish that captures the essence of autumn. These tender, homemade gnocchi made from roasted butternut squash are enveloped in a rich, nutty sage brown butter sauce. Each bite harmonizes sweet and savory flavors, making it the perfect meal for cozy gatherings or a special dinner. Serve it as a main course or alongside fresh salads for an impressive presentation.

Ingredients

Scale
  • 2 cups butternut squash, peeled and cubed
  • 1 to 2 cups all-purpose flour
  • 1 large egg
  • 1 teaspoon sea salt
  • 10 fresh sage leaves
  • ? cup unsalted butter
  • ? cup freshly grated Parmesan cheese

Instructions

  1. Preheat the oven to 400?F (200?C). Toss cubed butternut squash with olive oil, salt, and pepper on a baking sheet. Roast for about 25 minutes until tender.
  2. Allow the roasted squash to cool slightly. Mash until smooth in a bowl. Mix in the egg and gradually add flour until you have a soft, workable dough.
  3. On a floured surface, roll portions of dough into ropes about half an inch thick and cut into one-inch pieces. Create ridges using a fork.
  4. Boil salted water in a large pot. Add gnocchi; they are ready when they float (about 2 minutes). Remove with a slotted spoon.
  5. In a skillet over medium heat, melt butter until golden brown; add sage leaves until crispy. Toss the cooked gnocchi in the sauce and serve hot with Parmesan cheese.
