- 10 fresh sage leaves

Instructions
- Preheat the oven to 400?F (200?C). Toss cubed butternut squash with olive oil, salt, and pepper on a baking sheet. Roast for about 25 minutes until tender.
- Allow the roasted squash to cool slightly. Mash until smooth in a bowl. Mix in the egg and gradually add flour until you have a soft, workable dough.
- On a floured surface, roll portions of dough into ropes about half an inch thick and cut into one-inch pieces. Create ridges using a fork.
- Boil salted water in a large pot. Add gnocchi; they are ready when they float (about 2 minutes). Remove with a slotted spoon.
- In a skillet over medium heat, melt butter until golden brown; add sage leaves until crispy. Toss the cooked gnocchi in the sauce and serve hot with Parmesan cheese.
