Instructions
- Preheat oven to 400?F (200?C). Wrap beets in foil and roast for about 1 hour until tender.
- In a large pot, heat olive oil over medium heat. Saut? onion and garlic until fragrant (about 5 minutes).
- Once roasted, peel and chop the beets; add them to the pot along with vegetable broth. Bring to a boil then reduce to simmer for 10 minutes.
- Stir in spinach until wilted (about 2-3 minutes).
- Remove from heat; blend in coconut milk until smooth.
- Season with lemon juice, salt, and pepper before serving.
