  • 1 cup tricolor quinoa
  • 2 cups vegetable broth
  • 2 cups pumpkin, cubed (about one small sugar pumpkin)
  • 2 tsp extra virgin olive oil
  • 1 tsp salt
  • ? tsp black pepper
  • 2 garlic cloves, minced
  • 1 tbsp spirulina powder

Instructions

  1. Preheat your oven to 400?F (200?C) and line a baking sheet with parchment paper.
  2. In a bowl, toss pumpkin cubes with olive oil, salt, pepper, and minced garlic. Spread evenly on the prepared baking sheet.
  3. Roast pumpkin for about 25 minutes until tender and caramelized, flipping halfway through for even cooking.
  4. Rinse quinoa under cold water. In a saucepan, combine quinoa and vegetable broth; bring to a boil. Reduce heat to low, cover, and simmer for 15 minutes until liquid is absorbed.
  5. In a large bowl, combine roasted pumpkin and cooked quinoa. Stir in spirulina powder until evenly coated.
  6. Serve warm or at room temperature; drizzle with olive oil or sprinkle nuts for added crunch.
