- 1 lb boneless lamb shoulder
- 1 cup brown lentils
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 onion, diced
- 4 cloves garlic, minced
- 2 tbsp tomato paste
- 4 cups low-sodium chicken broth
- 1 tsp ground cumin
- 1 tsp dried thyme
- 2 bay leaves
- Salt and pepper to taste
Instructions
- Brown the lamb shoulder in a skillet over medium-high heat until seared on all sides.
- In the slow cooker, combine the browned lamb with lentils, carrots, celery, onion, garlic, tomato paste, broth, cumin, thyme, bay leaves, salt, and pepper.
- Cover and cook on low for 8 hours or high for 4 hours.
- Once cooked, remove the lamb and shred it using two forks before returning it to the soup.
- Serve hot with fresh herbs and crusty bread.
