Description

Slow Cooker Lamb & Lentil Soup is a hearty and comforting dish that combines tender lamb shoulder with nutritious brown lentils and aromatic spices. This easy-to-make soup simmers slowly, filling your kitchen with an enticing aroma.


Ingredients

  • 1 lb boneless lamb shoulder
  • 1 cup brown lentils
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 2 tbsp tomato paste
  • 4 cups low-sodium chicken broth
  • 1 tsp ground cumin
  • 1 tsp dried thyme
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. Brown the lamb shoulder in a skillet over medium-high heat until seared on all sides.
  2. In the slow cooker, combine the browned lamb with lentils, carrots, celery, onion, garlic, tomato paste, broth, cumin, thyme, bay leaves, salt, and pepper.
  3. Cover and cook on low for 8 hours or high for 4 hours.
  4. Once cooked, remove the lamb and shred it using two forks before returning it to the soup.
  5. Serve hot with fresh herbs and crusty bread.
