  • 8 oz thin rice noodles
  • 14 oz firm tofu, pressed and cubed
  • 1 cup low-sodium vegetable broth
  • 2 tbsp low-sodium soy sauce
  • 1 cup bell peppers, sliced
  • 1 cup carrots, julienned
  • 2 cups fresh spinach
  • 2 cloves garlic, minced
  • 1 inch fresh ginger, grated
  • 1 tbsp cooking oil

Instructions

  1. Boil water in a large pot and cook the rice noodles according to package instructions until tender. Drain and set aside.
  2. Press the tofu gently between paper towels to remove excess moisture, then cut into cubes.
  3. Heat oil in a non-stick skillet over medium heat. Add cubed tofu and saut? until golden brown on all sides (about 8?10 minutes). Remove from skillet.
  4. In the same skillet, add bell peppers, carrots, garlic, and ginger. Stir-fry for about five minutes until vibrant.
  5. Add cooked noodles back to the skillet along with saut?ed veggies and tofu. Pour in vegetable broth and soy sauce; toss gently until combined and heated through.
  6. Dish into bowls and garnish with sesame seeds or green onions if desired.
