- 8 oz thin rice noodles
- 14 oz firm tofu, pressed and cubed
- 1 cup low-sodium vegetable broth
- 2 tbsp low-sodium soy sauce
- 1 cup bell peppers, sliced
- 1 cup carrots, julienned
- 2 cups fresh spinach
- 2 cloves garlic, minced
- 1 inch fresh ginger, grated
- 1 tbsp cooking oil
Instructions
- Boil water in a large pot and cook the rice noodles according to package instructions until tender. Drain and set aside.
- Press the tofu gently between paper towels to remove excess moisture, then cut into cubes.
- Heat oil in a non-stick skillet over medium heat. Add cubed tofu and saut? until golden brown on all sides (about 8?10 minutes). Remove from skillet.
- In the same skillet, add bell peppers, carrots, garlic, and ginger. Stir-fry for about five minutes until vibrant.
- Add cooked noodles back to the skillet along with saut?ed veggies and tofu. Pour in vegetable broth and soy sauce; toss gently until combined and heated through.
