Ingredients

2 pounds bone-in or boneless chicken thighs or breasts

2 large carrots, sliced

3 medium potatoes, diced

1 cup green beans, trimmed

1 onion, finely chopped

2 cloves garlic, minced

6 cups low-sodium chicken broth

1 tablespoon dried thyme

Salt and pepper to taste


Instructions

1. Heat olive oil in a large pot over medium heat. Saut? onions and garlic until translucent.

2. Brown the chicken on both sides in the same pot; remove temporarily.

3. Add carrots and potatoes to the pot and saut? for about five minutes.

4. Return chicken to the pot, add thyme, salt, pepper, and pour in the broth.

5. Bring to a boil, then reduce heat and simmer for about 45 minutes until chicken is tender.

Notes

Feel free to add seasonal vegetables like bell peppers or corn! For extra richness, mix half broth with half white wine.
